Purple Sweet Potato Bites

Crispy little baked bites made from mashed purple sweet potato, seasoned with miso, coriander, and spices. A fun and healthy snack or appetizer with a beautiful color.

  • Sojamilch

Zubereitung

  1. Steam the purple sweet potatoes in a metal steamer basket over an inch (25cm of boiling water in a covered saucepan until tender, about 20 minutes.
  2. Transfer to a bowl and let cool for about 10 minutes.
  3. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  4. Mash the sweet potatoes with a fork or potato masher.
  5. Add the oat flour, miso paste, coriander, onion powder, black cumin, and pippali. Mix well. If the mixture is too dry to hold together, add a little soy milk, 1 teaspoon at a time.
  6. Use your hands to form the mixture into 1-inch (2.5cm) balls and arrange on the prepared baking sheet.
  7. Bake for about 8 minutes until light golden brown.
  8. Remove from the oven, flip each ball over, and bake for another 8 minutes.
  9. Remove from the oven and let cool slightly before serving.
