
Purple Sweet Potato Bites
Crispy little baked bites made from mashed purple sweet potato, seasoned with miso, coriander, and spices. A fun and healthy snack or appetizer with a beautiful color.

- Coriander(ground)1 tsp
- Onion Powder0.5 tsp
- Black cumin(ground)0.25 tsp

Instructions
- Steam the purple sweet potatoes in a metal steamer basket over an inch (25cm of boiling water in a covered saucepan until tender, about 20 minutes.
- Transfer to a bowl and let cool for about 10 minutes.
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Mash the sweet potatoes with a fork or potato masher.
- Add the oat flour, miso paste, coriander, onion powder, black cumin, and pippali. Mix well. If the mixture is too dry to hold together, add a little soy milk, 1 teaspoon at a time.
- Use your hands to form the mixture into 1-inch (2.5cm) balls and arrange on the prepared baking sheet.
- Bake for about 8 minutes until light golden brown.
- Remove from the oven, flip each ball over, and bake for another 8 minutes.
- Remove from the oven and let cool slightly before serving.
